That is the whole kit. You do not need a dedicated stainless steel polish for a frying pan, and you certainly do not need anything containing bleach.
Method 1: bicarbonate of soda for burnt-on food
Burnt-on food is carbonised protein and sugar welded to the metal. It is not a stain, it is a deposit, so the job is mechanical and alkaline rather than acidic. Bicarbonate of soda is both mildly alkaline and mildly abrasive, which is why it is the right tool here.
- Cool the pan first. Plunging hot steel into cold water risks warping the base, and a warped pan never sits flat on an induction hob again.
- Deglaze while it is still warm if you can. A splash of water in a warm pan lifts a surprising amount before anything sets hard.
- Simmer with bicarbonate. Cover the base with roughly 1cm of water, add a tablespoon of bicarbonate of soda, and simmer gently for 10 to 15 minutes. You will see flakes of the burnt layer floating loose.
- Scrape, do not gouge. Use a wooden spatula to work under the softened crust while the water is still in the pan.
- Finish with a paste. Tip out the water, sprinkle dry bicarbonate onto the damp surface, and scrub in small circles with a nylon pad.
- Rinse and dry straight away. Water left to evaporate on steel is what leaves spots in the first place.
For a truly catastrophic pan, repeat the simmer rather than reaching for something harsher. Two gentle rounds beat one aggressive one every time.
Method 2: vinegar and acid for water marks and limescale
Acid does a completely different job. It dissolves mineral deposits: the chalky white film from hard water, limescale rings, and the cloudy haze left by dishwasher detergent. If your pan looks dull and slightly white rather than black and crusty, this is your method.
- Start with a clean, cool, food-free pan. Acid on top of grease achieves nothing.
- Mix roughly one part white vinegar to three parts water, enough to cover the marks.
- Leave it for 5 to 10 minutes. Warming it gently speeds things up, but do not boil it dry.
- Wipe with a soft cloth, rinse thoroughly with warm water, and dry immediately.
Lemon juice works the same way, and a citric acid based cleanser is simply a more concentrated version of the same idea. All of them are dissolving minerals, not scrubbing them.

When acid is the wrong choice
This is the part most guides skip, and it is the reason people end up with a worse pan than they started with.
- Acid does nothing to burnt-on food. Carbonised residue is not a mineral deposit. Soaking a burnt pan in vinegar wastes an hour and leaves the mess exactly where it was. Use bicarbonate and a simmer instead.
- Never leave acid sitting for hours. Stainless steel resists corrosion because of a thin, self-repairing chromium oxide layer. Prolonged contact with acid, especially warm acid, chips away at that layer faster than it can rebuild.
- Avoid anything containing chloride. Bleach, and salty acidic solutions left standing, are the classic cause of pitting in stainless steel: small permanent pinprick craters that no amount of scrubbing will remove. Dissolve salt into water fully, and never leave a salty pan to sit overnight.
- Never mix acid with bleach. Combining vinegar or any acidic cleaner with a bleach-based product releases chlorine gas. Do not do it in a kitchen, or anywhere else.
Why baking soda and vinegar together is a myth
Search for how to clean a stainless steel pan and you will be told to combine baking soda and vinegar. It is one of the most persistent bits of bad kitchen advice going.
Bicarbonate of soda is alkaline. Vinegar is acidic. Put them together and they neutralise each other, fizzing off carbon dioxide and leaving you with a weak salt solution that is neither alkaline nor acidic. The dramatic foam is the two useful ingredients cancelling out in front of you.
Use them one at a time, in order. Bicarbonate first for the burnt-on food. Rinse. Then vinegar for the marks and the heat tint. Two separate steps, two separate jobs.
How to remove rainbow heat tint
Blue, purple and gold swirls across the base of a pan look alarming and are completely harmless. Heating stainless steel hard, especially empty, thickens that invisible chromium oxide layer until it starts refracting light, in the same way an oil film on a puddle does. The metal underneath is untouched, and the pan is perfectly safe to cook in.
If the look bothers you, it comes off easily:
- Make sure the pan is cool, clean and dry of grease.
- Wipe the tinted area with neat white vinegar on a cloth, or apply a citric acid based cleanser.
- Leave it for a couple of minutes, then buff gently with a soft cloth.
- Rinse thoroughly and dry.
To stop it coming back, preheat over a medium flame rather than a high one, and get oil or food into the pan before it reaches searing temperature.
What never to use on stainless steel
- Steel wool. It scratches the finish and leaves behind iron fragments that later rust, so it looks like the pan itself is corroding when it is not.
- Bleach and chlorine-based cleaners. The pitting risk is real and permanent.
- Oven cleaner. Far too caustic for cookware, and it will dull the finish.
- Cold water into a hot pan. Thermal shock warps bases.
- Leaving it wet. Almost every water spot and chalky mark on a stainless pan is simply evaporated tap water. Dry it.
Are stainless steel pans hard to clean?
Honestly, yes, harder than the alternatives. That is worth saying plainly, because a lot of cookware writing pretends otherwise.
Bare stainless has no release layer. Proteins bond chemically to the exposed metal, which is exactly why stainless is so good at building fond for a pan sauce, and exactly why eggs weld themselves to it. Every method above exists because the food is genuinely stuck to the surface rather than sitting on top of it.

Stopping the mess before it starts
Most stainless steel cleaning problems are cooking problems wearing a disguise.
- Preheat properly. Get the dry pan up to a medium heat before the oil goes in. A drop of water should skitter across the surface as a bead rather than hissing and vanishing.
- Then add the oil, then the food. Oil into a cold pan seeps into the microscopic texture of the steel and polymerises into varnish.
- Do not crowd the pan. Crowded food steams, drops its temperature, and sticks.
- Leave it alone. Protein releases from steel by itself once it has formed a crust. Fighting it early is what tears it and welds it down.
