  2. Strain the broth through a fine mesh sieve, discarding the bones and aromatics.

  3. In the same pot, heat olive oil or butter over medium heat. Sauté the onion, garlic, carrots, and celery until softened, about 5–7 minutes.

  4. Add the strained broth back to the pot. Bring to a simmer and stir in the cooked turkey, peas, and optional rice or pasta. Simmer for 15–20 minutes until the vegetables are tender and the flavors meld.
